FOOD – It comes from Marseille, baby. A great specialty of the Phocaean city has just been elected among the 20 best soups in the world: bouillabaisse. It’s the American media CNN who shared her list titled “The 20 Best Soups in the World” this Friday, January 14.
If there is not really a classification between the specialties, the fish soup from Marseilles is mentioned in fourth position after the Nigerian Banga – which notably includes fresh catfish, beef and dried seafood -, followed by Vietnamese beef Pho and Ukrainian Borscht.
“A fisherman’s stew turned culinary icon, bouillabaisse distils classic Mediterranean flavors in a dish synonymous with the coastal city of Marseille. Saffron, olive oil, fennel, garlic and tomatoes mingle with fresh fish from the sea”, incense CNN. This before recalling that if, “at a certain time”, this soup was made up of the fish of the day, its content is now subject to strict rules.
“According to the signatories of the 1980 Bouillabaisse Charter – a collective attempt by local chefs to ensure the quality of French soup – the most authentic recipe must include at least four types of fish and seafood chosen from a list that includes monkfish, red mullet and scorpionfish”, specify our American colleagues.
