The Valladolid Natursnacks will make cookies and crackers taking advantage of the waste of the kale leaf

The Valladolid company Natursnacks, dedicated to the production of snacks from 100% natural dehydrated fruit and vegetables, will be able to take advantage of the waste of kale leaves for the production of cookies and crackers, which will allow this by-product to be reintegrated into the food chain.

It is a process in which it is immersed thanks to the REInovaSI project, developed by the Castilla y Len Food Industry Association, Vitartis, together with Itacyl and the Valladolid Chamber of Commerce, for the implementation of a circular economy action plan in small businesses.

Specifically, Itacyl has investigated the possibilities of taking advantage of the by-products that are generated in the kale transformation process. From the nerve of the leaves of this food, important source of bioactive compounds, a flour has been obtained for the elaboration of cookies and crackers. With a small percentage of this flour, the antioxidant properties of the final product are doubled and even tripled, without altering its sensory characteristics. In this way, a waste with a limited use as a by-product for animal feed, recovers all its value and is reintegrated into the production chain

Furthermore, within the framework of REInovaSI, a market study is also going to be done to know the potential of the developed product and an energy audit to help the company in its process of optimizing the use of energy.

Some actions that are part of the line of support for entrepreneurship of the new Vitartis Strategic Plan, which has among its objectives to promote ideas and talent of young entrepreneurs from Castilla y Len, as well as favor the implementation of agri-food projects to enrich the ecosystem of innovation with talent from outside the companies.

Natural product

Natursnacks started its activity in the town of Pedrajas de San Esteban in 2016 at the hands of Sandra de Blas, who continues to lead this small company dedicated to the production of dehydrated fruits and vegetables, which it sells in the form of organic fruit snacks, a selection of shaker fruit and a range of kale chips.

The drying process is carried out by hot air at a low temperature, which maintains and enhances the flavor of the fresh fruit. In addition, it is done naturally No added sugars, no additives, no preservatives and no gluten.

It is an artisan process, made from seasonal fruits, in whose dehydration process they lose up to 85% of their volume; for example, one hundred kilos of orange is reduced to five kilos of final product.

Currently, the company’s production reaches 3,500 kilos of dehydrated fruit per year, an amount that will double in 2022 with the incorporation of a second drying equipment.

Natursnacks, in addition to the products it markets, dehydrates for third parties, as long as they are vegetable products, an activity that accounts for 30% of its business volume.
