Tierra de Sabor closes its presence in Madrid Fusión with a trip back in time through gastronomy

The third day of Madrid Fusión has hosted two presentations promoted by Tierra de Sabor: ‘The river on the plate’, directed by chef Juanjo Losada from the restaurant Pablo (León) and ‘Evolution. Ancestral techniques applied to haute cuisine ‘, directed by chef Miguel Cobo from the Cobo Estrato restaurant (Burgos).

During the three days that Madrid Fusión has taken place, the most important international meeting of gastronomy where top-level chefs from all over the continent meet, the Ministry of Agriculture, Livestock and Rural Development, through Tierra de Sabor , has been publicizing and highlighting the quality agri-food products of Castilla y León and showing its multiple gastronomic options.

Juanjo Losada, from the Leon restaurant Pablo, has been in charge of exposing a novel approach that starts from a territory with a large presence of water since the province of León is famous for its more than 3,000 kilometers of trout rivers.

With this ‘raw material’, Losada has made a tour of the flora and fauna of the banks of León, focusing on the trout, crab, frog and various herbs found in riverbeds.

This approach has also made it possible to influence the importance that, from Tierra de Sabor, is given to sustainability, the conservation and regeneration of river ecosystems.

Ancient techniques

Miguel Cobo, from the Burgos restaurant Cobo Stratos has presented ‘Evolution. Ancestral techniques applied to haute cuisine ‘which presents the importance of food in human evolution.

Cobo has guided the attendees through different stages such as Africa, Atapuerca, Altamira, Neolithic, Rome or Mestizaje. Explaining the latest foods and techniques in all of them. These stages are the common thread of a menu that allows you to travel back in time through gastronomy.

Today the Land of Flavor Award for the Most Sustainable Winery that has recognized the work of the Leonese winery Fuentes del Silencio.

The deputy minister of Rural Development and general director of the Agrarian Technological Institute, Jorge Llorente, has been commissioned to deliver the award, recalling that this act “reaffirms Tierra de Sabor’s commitment to sustainability, a fundamental aspect for the future of wine, and putting nature at the forefront “.

Llorente has also highlighted Castilla y León’s commitment “to organic viticulture. The area devoted to this type of production has increased in the last ten years by 515% and the wineries dedicated to this type of viticulture have grown by 87% in the last five years “.
